Dark Chocolate Porter Brownies

These brownies are for a true dark chocolate lover! They are sweet, but not overly sweet, which is why I like them. They are more fudgy than cakey if that matters to you. Enjoy them by themselves or with a scoop of vanilla or peanut butter ice cream to really take it over the top.
Pro Tip: If enjoying with ice cream, don't let them cool all the way.
You will need:
2 Mixing bowls
Whisk
13-inch-by-9-inch baking pan
Parchment paper
Ingredients
8 Ounces 100% Cacao chocolate bar chopped (I like Ghirardelli )
4 Ounces of Butterscotch chips (Just trust me)
1 cup coconut oil
1 tablespoon espresso powder
1 ¼ cups white sugar
¾ cup dark brown sugar
½ cup DuClaw Sweet Baby Jesus! Chocolate Peanut Butter Porter (or similar chocolate stout)
1 ¼ cups all purpose flour, spooned and leveled
¼ cup cocoa powder
1 teaspoon salt
5 eggs
1 tablespoon vanilla extract
Instructions:
Heat oven to 350 degrees, prepare a 9-inch-by-13-inch pan and line it with parchment paper. If you like, use cooking spray on the 9x13 to help the parchment stay in place.
Start by melting your chopped chocolate and butterscotch chips in the microwave, 30 sec at a time, stirring between each nuke in the microwave.
Once you've reached a just melted consistency, dump in your coconut oil, vanilla, and both sugars to combine with a whisk. Gradually add in one egg at a time. Once the head/fizz has settled after measuring, then add your Porter.
In another bowl, combine and mix your flour, cocoa powder, salt, and espresso powder. Then whisk it into the wet chocolate mixture until just combined.
Dump the brownie mix into your prepared 9x13. Bake for 35 minutes.
You want the brownies to be soft. Juggle the pan before removing from the oven. Make sure the middle doesn't resemble pudding. If it does, give it a few more minutes. You want the brownies to wiggle more like stiff Jello than pudding.
Let them cool in the pan for about 10 min. Once cooled a bit lift the parchment paper out to finish cooling on a rack. When you are ready, cut your dark chocolate porter brownies!
